How To Make Quick Vegetable Soup
This quick and easy vegetable soup promises a hearty and rich dish made from vegetable broth and instant rice that’s ready in under an hour.

Ingredients
- 1tbspolive oil
- 1small onion,chopped
- ½cupcelery,sliced
- 14½ozvegetable broth,(3 cans)
- 15ozwhole potatoes,(1 can), cubed
- 14½ozstewed tomatoes,(1 can)
- ½tspfresh thyme,chopped
- salt and ground black pepper,to taste
- 16ozfrozen mixed vegetables,(1 pkg)
- ½cupinstant rice
Instructions

Heat olive oil in a Dutch oven or heavy stockpot over medium heat; cook and stir onion and celery for about 10 minutes until tender.

Add broth, potatoes, stewed tomatoes, thyme, salt, and pepper; bring to a boil. Mix vegetables and rice into broth mixture and simmer for 20 minutes.
