This quick and easy vegetable soup promises a hearty and rich dish made from vegetable broth and instant rice that’s ready in under an hour.

Ingredients

  • 1tbspolive oil
  • 1small onion,chopped
  • ½cupcelery,sliced
  • 14½ozvegetable broth,(3 cans)
  • 15ozwhole potatoes,(1 can), cubed
  • 14½ozstewed tomatoes,(1 can)
  • ½tspfresh thyme,chopped
  • salt and ground black pepper,to taste
  • 16ozfrozen mixed vegetables,(1 pkg)
  • ½cupinstant rice

Instructions

  1. Heat olive oil in a Dutch oven or heavy stockpot over medium heat; cook and stir onion and celery for about 10 minutes until tender.

  2. Add broth, potatoes, stewed tomatoes, thyme, salt, and pepper; bring to a boil. Mix vegetables and rice into broth mixture and simmer for 20 minutes.

  3. Serve and enjoy.
