  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 red bell pepper, diced
  • 4 cups vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups spinach leaves
  • Parmesan cheese, for topping (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables have softened, about 5 minutes.

  2. Add the zucchini, yellow squash, and red bell pepper. Cook for another 5 minutes.

  3. Pour in the vegetable broth and diced tomatoes. Stir in the dried basil, dried oregano, salt, and pepper. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20 minutes.

  4. Stir in the spinach leaves and cook for an additional 2 minutes, until wilted.

  5. Serve the Italian Vegetable Soup hot, topped with grated Parmesan cheese if desired.
