  • 2 carrots, peeled and diced
  • 1 sweet potato, peeled and diced
  • 2 parsnips, peeled and diced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

  2. Add the diced carrots, sweet potato, and parsnips to the pot. Stir in the cumin, paprika, turmeric, and cinnamon, coating the vegetables in the spices.

  3. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender.

  4. Use an immersion blender or a regular blender to puree the soup until smooth. Be careful when blending hot liquids.

  5. Season with salt and pepper to taste.

  6. Serve the spiced root vegetable soup hot, garnished with fresh cilantro.
