How To Make Curried Spinach & Lentil Soup

Ingredients
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tbsp curry powder
- 1 cup red lentils
- 4 cups vegetable broth
- 4 cups fresh spinach
- 1 cup coconut milk
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh cilantro, for garnish
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until they are soft and fragrant.

Stir in the curry powder and cook for an additional minute.

Add the red lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are cooked through and tender.

Stir in the fresh spinach and coconut milk. Cook for another 5 minutes until the spinach is wilted.

Use an immersion blender to puree the soup until smooth, or transfer the soup to a blender and blend in batches until smooth.

Season the soup with salt, pepper, and lemon juice to taste.
