  • 1tspolive oil
  • 1medium onion
  • 4clovegarlic
  • 1canfava beans
  • 1medium yellow summer squash
  • cupsbeef stock
  • 2cupsplum tomatoes,diced
  • 4ozcanadian bacon
  • 1tspItalian herb seasoning
  • 1tspred wine vinegar
  • salt and pepper,to taste


  1. Heat the oil in a 6-quart pot over medium-high heat.

  2. Add the onion and garlic and sauté until the onion is golden.

  3. Add the beans, squash, stock, tomatoes, bacon, herb seasoning, and vinegar. Cover and bring to a boil.

  4. Reduce the heat and simmer for about 15 minutes until the squash is tender.

  5. Taste and season with salt and pepper if needed.
