How To Make Quick Fava Bean Soup

Ingredients
- 1tspolive oil
- 1medium onion
- 4clovegarlic
- 1canfava beans
- 1medium yellow summer squash
- 2¾cupsbeef stock
- 2cupsplum tomatoes,diced
- 4ozcanadian bacon
- 1tspItalian herb seasoning
- 1tspred wine vinegar
- salt and pepper,to taste
Instructions

Heat the oil in a 6-quart pot over medium-high heat.

Add the onion and garlic and sauté until the onion is golden.

Add the beans, squash, stock, tomatoes, bacon, herb seasoning, and vinegar. Cover and bring to a boil.

Reduce the heat and simmer for about 15 minutes until the squash is tender.

Taste and season with salt and pepper if needed.
