  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt to taste
  • Pepper to taste
  • 2 cups shredded Gruyère cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

  2. Add the carrots, celery, red bell pepper, and zucchini to the pot. Cook for about 5 minutes, until the vegetables start to soften.

  3. Pour in the vegetable broth and diced tomatoes. Add the dried thyme, dried oregano, salt, and pepper. Stir well.

  4. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes, until the vegetables are tender.

  5. Remove the pot from the heat and use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.

  6. Return the soup to the heat and stir in the shredded Gruyère cheese until melted and creamy.

  7. Serve the soup hot, garnished with fresh parsley.
