Ingredients

  • 1 sheet of puff pastry, thawed
  • 1 pint cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 cup grated gruyère cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. Roll out the puff pastry on a lightly floured surface and transfer it to a baking sheet.

  3. Prick the pastry all over with a fork.

  4. In a bowl, toss the cherry tomatoes with olive oil, thyme, salt, and pepper.

  5. Spread the tomato mixture evenly on top of the puff pastry.

  6. Bake in the preheated oven for 1 hour until the tomatoes are soft and slightly caramelized.

  7. Remove the tart from the oven and sprinkle the grated gruyère cheese on top.

  8. Return the tart to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.

  9. Garnish with fresh basil leaves before serving.
