How To Make Butter Bean & Squash Crumble

Ingredients
- 1 cup butter beans
- 2 cups diced squash
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tbsp melted butter
Instructions

Preheat the oven to 375°F (190°C).

In a large pan, heat some oil over medium heat and sauté the onion until translucent.

Add the garlic, dried thyme, and paprika, and cook for another minute.

Add the butter beans and squash to the pan and stir to combine. Cook for about 5 minutes, until the squash begins to soften.

Season with salt and pepper to taste.

In a separate bowl, mix together the breadcrumbs, Parmesan cheese, and melted butter until well combined.

Transfer the butter bean and squash mixture to an ovenproof dish and sprinkle the breadcrumb mixture evenly over the top.

Bake in the preheated oven for 25-30 minutes, until the crumble topping is golden brown and crispy.
