How To Make Clam and Sweet Potato Chowder Recipe

A creamy and delicious chowder made with clams and sweet potatoes.

Serves:

Ingredients

  • 2 tablespoons of butter
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 stalks of celery, diced
  • 2 medium sweet potatoes, peeled and diced
  • 1 bay leaf
  • 1 teaspoon of dried thyme
  • 2 tablespoons of all-purpose flour
  • 4 cups of chicken stock
  • 2 cups of canned clams, drained with juice reserved
  • 1 cup of heavy cream
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.

  2. Add the onion, garlic, and celery and cook until softened, about 5 minutes.

  3. Add the sweet potatoes, bay leaf, and dried thyme and cook for another 5 minutes.

  4. Stir in the flour and cook for 2 minutes.

  5. Gradually add the chicken stock, reserved clam juice, and clams, stirring constantly.

  6. Bring the mixture to a boil and then reduce the heat and let simmer for 20 minutes.

  7. Remove the bay leaf and transfer half of the mixture to a blender and blend until smooth.

  8. Return the mixture to the pot and stir in the heavy cream.

  9. Season with salt and pepper to taste.

  10. Garnish with chopped parsley and serve hot.
