Ingredients

  • 1 lb lump crab meat
  • 4 cups cubed watermelon
  • 2 cups baby arugula
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped red onion
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • salt and pepper to taste

Instructions

  1. In a large bowl, toss together the crab meat, watermelon, arugula, mint, and red onion.

  2. In a separate small bowl, whisk together the olive oil, lime juice, salt, and pepper.

  3. Pour the dressing over the salad and gently toss to combine. Serve chilled.
