  • 4 boneless, skinless chicken breasts
  • 1 cup lump crabmeat
  • 1 cup chopped fresh spinach
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F.

  2. Slice chicken breasts horizontally through the middle to create pockets.

  3. In a mixing bowl, combine crabmeat, spinach, breadcrumbs, Parmesan, mayonnaise, garlic, Dijon, salt, and pepper.

  4. Stuff chicken breasts with the mixture and secure with toothpicks.

  5. Transfer chicken breasts to a baking dish and bake for 25-30 minutes or until cooked through.

  6. Let rest for 5-10 minutes before serving.
