How To Make Chunky Chicken & Ham Chowder

Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cooked ham, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup milk
- 1 cup corn kernels
- 1 cup potatoes, diced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- 2 tbsp butter
- 2 tbsp all-purpose flour
Instructions

In a large pot, melt the butter over medium heat. Add the onion, garlic, carrots, and celery and sauté until vegetables are tender.

Stir in the flour and cook for 1 minute, then gradually whisk in the chicken broth and milk. Bring to a simmer.

Add the cooked chicken, ham, corn, potatoes, thyme, and parsley to the pot. Season with salt and pepper to taste.

Simmer for 20 minutes, or until the potatoes are cooked through and the chowder has thickened slightly.
