How To Make Mini Pork Pies with Piccalilli

Ingredients

  • 250g pork mince
  • 1 small onion, finely chopped
  • 1 clove of garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 250g shortcrust pastry
  • 1 egg, beaten
  • Piccalilli, for serving

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a bowl, mix together the pork mince, onion, garlic, thyme, salt, and pepper. Set aside.

  3. Roll out the shortcrust pastry on a floured surface and cut out circles using a round cutter.

  4. Line a muffin tin with the pastry circles, pressing them gently into the cups.

  5. Fill each pastry case with a spoonful of the pork mixture.

  6. Brush the edges of the pastry with beaten egg, then cover each pie with another pastry circle, pressing the edges to seal.

  7. Brush the tops of the pies with beaten egg and make a small hole in the center of each pie to allow steam to escape.

  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the filling is cooked through.

  9. Serve the mini pork pies hot or cold, with piccalilli on the side.
