How To Make Smoked Vegetables

Smoked vegetables are a delicious side dish that you can easily make in your smoker. The dish mostly gets its flavor from the balsamic vinegar.

Ingredients

  • 1 red onion, peeled and quartered
  • 1 red pepper, seeded and sliced
  • 2 zucchinis, sliced
  • 1 yellow summer squash, sliced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 6 garlic cloves, minced
  • 1 tsp sea salt
  • ½ tsp black pepper

Instructions

  1. Mix all ingredients in a bowl.
  2. Preheat pellet grill to 350 degrees F.

  3. Close pellet grill lid and cook at 350 degrees F for about 30 to 45 minutes or until vegetables are carmalized and cooked through.
