Ingredients

  • 4 trout fillets
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Season the trout fillets with salt and pepper on both sides.

  2. Heat olive oil in a large skillet over medium heat. Add the trout fillets and cook for 3-4 minutes on each side, until crispy and cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add the diced onion and minced garlic. Sauté until fragrant and golden brown.

  4. Add the diced tomatoes, dried basil, dried oregano, and red pepper flakes (if using) to the skillet. Stir well to combine.

  5. Simmer the sauce for 10-15 minutes, until it thickens slightly.

  6. Return the trout fillets to the skillet and simmer for an additional 2-3 minutes, until heated through.

  7. Serve the trout with tomato sauce over cooked rice or with a side of vegetables.
