Ingredients

  • 24 fresh mussels
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped parsley
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the mussels under cold water and remove any beards. Discard any mussels that are open or broken.

  3. In a small bowl, combine the breadcrumbs, Parmesan cheese, garlic, parsley, olive oil, salt, and pepper.

  4. Place the mussels on a baking sheet. Spoon a small amount of the breadcrumb mixture onto each mussel.

  5. Bake the mussels for about 10-12 minutes, or until they are cooked through and the breadcrumbs are golden brown.

  6. Serve the stuffed mussels with lemon wedges for squeezing over the top.
