  • 4 pounds of fresh mussels
  • 2 tablespoons of butter
  • 4 cloves of garlic, minced
  • 1 small onion, diced
  • 1 cup of white wine
  • 1 cup of chicken broth
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 4 large russet potatoes, cut into fries

Instructions

  1. Scrub the mussels under cold water, removing any beards or dirt. Discard any mussels that are cracked or open.

  2. In a large pot, melt the butter over medium heat. Add the garlic and onion, and sauté until softened.

  3. Pour in the white wine and chicken broth, and bring to a simmer.

  4. Add the mussels to the pot, cover, and steam for about 5 minutes or until the mussels have opened. Discard any mussels that remain closed.

  5. Meanwhile, heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

  6. Fry the potato fries in batches until golden and crispy. Remove from the oil and drain on paper towels. Season with salt and pepper.

  7. Remove the mussels from the pot using a slotted spoon, and transfer them to a serving bowl.

  8. Pour the cooking liquid over the mussels and sprinkle with chopped parsley.

  9. Serve the moules frites hot with the crispy french fries on the side.
