Serves:
Ingredients
- 2 pounds mussels, cleaned and debearded
- 1 cup dry white wine
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/4 cup chopped parsley
- Salt and pepper, to taste
- 4 slices crusty bread
- 2 tablespoons butter, softened
Instructions
-
In a large pot, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
-
Add the mussels to the pot and pour in the white wine. Increase the heat to high and cover the pot. Cook for about 5-7 minutes, shaking the pot occasionally, until the mussels open up. Discard any mussels that do not open.
-
While the mussels are cooking, preheat the broiler. Spread the softened butter on one side of each slice of bread. Place the bread butter-side up on a baking sheet and broil until golden brown and crispy, about 2-3 minutes.
-
Once the mussels are cooked, remove them from the pot using a slotted spoon and transfer them to a serving dish. Season with salt, pepper, and chopped parsley.
-
Serve the mussels with the garlic butter toasts on the side for dipping into the delicious white wine sauce.
