How To Make Steamed Mussels with Leeks, Thyme & Bacon

Ingredients
- 2 lbs fresh mussels, cleaned and debearded
- 4 slices bacon, diced
- 2 leeks, white and light green parts only, thinly sliced
- 2 cloves garlic, minced
- 1 cup white wine
- 1 cup chicken or vegetable broth
- 2 sprigs fresh thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, cook the diced bacon over medium heat until crispy. Remove bacon from the pot and set aside, leaving the bacon fat in the pan.

Add the sliced leeks to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.

Increase the heat to high and add the white wine, chicken or vegetable broth, and fresh thyme. Bring to a boil.

Add the cleaned mussels to the pot and cover with a lid. Steam for about 5-7 minutes, or until the mussels have opened.

Remove the mussels from the pot using a slotted spoon and place them in a serving dish. Discard any mussels that did not open.

Season the broth in the pot with salt and pepper to taste. Pour the broth over the mussels in the serving dish.

Sprinkle the crispy bacon over the mussels and garnish with fresh chopped parsley.

Serve hot with crusty bread for dipping.
