How To Make Garden Eggs Stew with Boiled Green Plantain

- 8 garden eggs
- 4 green plantains
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 2 tomatoes, chopped
- 2 tablespoons of vegetable oil
- 1 teaspoon of curry powder
- 1 teaspoon of thyme
- 1 teaspoon of paprika
- Salt and pepper to taste
- Water
Instructions

Wash the garden eggs and make a small incision on each.

Place the garden eggs in a pot with water and cook until tender.

Once cooked, remove the garden eggs from the pot and peel off the skin. Set aside.

In a separate pot, add the vegetable oil and heat over medium heat.

Add the onions, garlic, and ginger and sauté until translucent.

Add the chopped tomatoes and cook until soft.

Mash the garden eggs and add them to the pot with the onions and tomatoes.

Stir in the curry powder, thyme, paprika, salt, and pepper. Add water if needed to achieve desired consistency.
