Ingredients

  • 1 lb (500g) mixed seafood (shrimp, fish, scallops, etc.)
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust according to spice preference)
  • 1 can (14 oz/400g) diced tomatoes
  • 1 cup (240 ml) seafood or chicken broth
  • 1 lime, juice and zest
  • Salt and pepper, to taste
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Sauté for 5 minutes until softened.

  2. Add the cumin, smoked paprika, and cayenne pepper. Cook for another minute, stirring constantly to release the aromas.

  3. Add the diced tomatoes, broth, lime juice, and zest. Bring to a simmer and let cook for 10 minutes.

  4. Gently add the mixed seafood to the pot and cook for an additional 5-7 minutes, or until the seafood is cooked through and tender.

  5. Season with salt and pepper to taste.

  6. Serve the spicy seafood stew hot, garnished with fresh cilantro leaves and lime wedges on the side. Enjoy!
