Ingredients
- 1 lb white fish fillets, cut into chunks
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 jalapeno pepper, seeded and minced
- 1 can diced tomatoes
- 2 cups fish or vegetable broth
- 1 tsp paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Cook until the vegetables are softened, about 5 minutes.

Add the tomatoes, broth, paprika, and cayenne pepper to the pot. Bring to a simmer.

Season the fish chunks with salt and pepper, then gently add them to the pot. Cook for about 10 minutes, until the fish is cooked through and flakes easily.

Serve the spicy fish stew hot, garnished with fresh cilantro.
