Ingredients
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 4 ribs celery, chopped
- 4 cloves garlic, minced
- 2 cups seafood stock
- 1 tbsp Cajun seasoning
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp hot sauce
- 1 lb medium shrimp, peeled and deveined
- Salt and freshly ground black pepper, to taste
- 2 green onions, sliced diagonally
- Cooked rice, for serving
Instructions

In a large pan, melt the butter over medium heat. Add the flour and cook, stirring constantly, until it turns the color of light

brown, about 6-8 minutes.

Add the onion, green bell pepper, celery, and garlic. Cook until the vegetables are tender, about 8-10 minutes.

Add the seafood stock, Cajun seasoning, paprika, thyme, oregano, and hot sauce. Stir well and bring to a boil, then reduce the

heat and simmer for 10 minutes.

Add the shrimp and cook until they are pink and cooked through, about 5-7 minutes.

Season with salt and pepper, to taste. Serve over cooked white rice, topped with sliced green onions.
