How To Make Shrimp Burritos

Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions

In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and cook until softened.

Add the shrimp to the skillet and season with chili powder, cumin, paprika, salt, and pepper. Cook until the shrimp are pink and cooked through, about 3-4 minutes per side.

Warm the tortillas in a dry skillet or microwave for a few seconds.

Assemble the burritos by spreading a spoonful of rice on each tortilla, followed by a spoonful of black beans, cooked shrimp, shredded cheese, sour cream, and cilantro.

Fold in the sides of the tortillas and roll them up tightly.

Heat a large skillet or griddle over medium heat. Place the burritos seam-side down and cook for 2-3 minutes until golden brown. Flip and cook on the other side until heated through.

Serve the shrimp burritos warm with additional sour cream and cilantro, if desired.
