Ingredients

  • 1 lb scallops
  • 8 oz mushrooms, sliced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/4 cup chicken broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the scallops dry with a paper towel and season with salt and pepper.

  2. In a large skillet, melt the butter over medium-high heat. Add the scallops and cook for 2-3 minutes per side until golden brown. Remove from the skillet and set aside.

  3. In the same skillet, add the mushrooms and garlic, and cook until the mushrooms are tender and golden brown.

  4. Deglaze the skillet with white wine and cook for 2 minutes until slightly reduced. Add the chicken broth and bring to a simmer.

  5. Stir in the heavy cream and return the scallops to the skillet. Cook for an additional 2 minutes until the sauce has thickened slightly and the scallops are cooked through.

  6. Season with salt and pepper to taste. Serve the scallops and mushrooms over rice or pasta, garnished with fresh parsley.
