How To Make Cod & spinach yellow curry

  • 500g cod fillets, cut into chunks
  • 200g fresh spinach leaves
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 tbsp yellow curry paste
  • 400ml coconut milk
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)


  1. Heat a little oil in a pan and add the onion. Cook until softened.

  2. Add the garlic and curry paste to the pan and cook for 2 minutes, stirring constantly.

  3. Pour in the coconut milk and bring to a simmer.

  4. Add the fish sauce and brown sugar, stirring well to combine.

  5. Carefully add the cod chunks to the pan and cook for 5-7 minutes, or until the fish is cooked through.

  6. Stir in the spinach leaves and cook for a further 2-3 minutes, or until wilted.

  7. Squeeze in the lime juice and give it a final stir.

  8. Serve the curry over steamed rice and garnish with fresh cilantro.
