How To Make Cod & spinach yellow curry

Ingredients
- 500g cod fillets, cut into chunks
- 200g fresh spinach leaves
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 2 tbsp yellow curry paste
- 400ml coconut milk
- 1 tbsp fish sauce
- 1 tsp brown sugar
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
Instructions

Heat a little oil in a pan and add the onion. Cook until softened.

Add the garlic and curry paste to the pan and cook for 2 minutes, stirring constantly.

Pour in the coconut milk and bring to a simmer.

Add the fish sauce and brown sugar, stirring well to combine.

Carefully add the cod chunks to the pan and cook for 5-7 minutes, or until the fish is cooked through.

Stir in the spinach leaves and cook for a further 2-3 minutes, or until wilted.

Squeeze in the lime juice and give it a final stir.

Serve the curry over steamed rice and garnish with fresh cilantro.
