  • 4 cod fillets
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup coconut milk
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish

Instructions

  1. In a small bowl, mix together the curry powder, turmeric, cumin, coriander, chili powder, garlic powder, ginger powder, salt, and black pepper.

  2. Season the cod fillets with the spice mixture, making sure both sides are coated well.

  3. Heat the vegetable oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until they become soft and translucent.

  4. Push the onions and garlic to one side of the skillet and place the seasoned cod fillets in the empty space. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

  5. Pour in the coconut milk and lime juice, and gently stir to combine. Allow the mixture to simmer for another 2-3 minutes.

  6. Remove from heat and garnish with fresh cilantro. Serve the curried cod with rice or naan bread.
