Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 cup corn kernels
  • 1 cup diced cod fillets
  • 1/2 cup peeled and deveined prawns
  • 1 cup coconut milk
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until translucent.

  2. Add curry powder and stir until fragrant.

  3. Add corn kernels, diced cod fillets, and peeled and deveined prawns. Cook for 5 minutes, stirring occasionally.

  4. Pour in coconut milk and bring to a simmer. Cook for another 10 minutes or until the fish and prawns are cooked through.

  5. Season with salt to taste.

  6. Serve the curried corn with cod and prawns hot, garnished with fresh cilantro.
