Serves:

Ingredients

  • 4 cod fillets
  • 1 cup brown rice
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 cup sliced green olives
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Cook the brown rice according to package instructions.

  2. In a tagine or large skillet, heat olive oil over medium heat. Add diced onion and minced garlic. Cook until the onion is translucent.

  3. Add the cod fillets to the tagine and sprinkle with ground cumin, ground coriander, paprika, ground turmeric, salt, and black pepper. Cook for 5 minutes on each side, or until the fish is flaky.

  4. Add the sliced green olives to the tagine and stir to combine with the fish.

  5. Cover the tagine and simmer for 10 minutes, or until the flavors are well combined.

  6. Serve the cod & olive tagine over the cooked brown rice. Garnish with fresh cilantro.
