How To Make Mixed Vegetable Tagine

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp paprika
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- 1 sweet potato, peeled and diced
- 1 zucchini, sliced
- 1 red bell pepper, diced
- 1 cup cauliflower florets
- 1 cup canned chickpeas, rinsed and drained
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large tagine or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic, and sauté until soft and translucent.

Add the ground cumin, coriander, turmeric, and paprika to the pot, and cook for another minute until fragrant.

Stir in the diced tomatoes and vegetable broth, then add the sweet potato, zucchini, red bell pepper, cauliflower, and chickpeas. Season with salt and pepper to taste.

Cover the tagine and simmer for 30 minutes, or until the vegetables are tender.

Serve the mixed vegetable tagine over cooked couscous or rice. Garnish with freshly chopped cilantro.
