White Bean and Fennel Salad Recipe

The licorice taste of fennel adds incredible flavor to this salad.


This white bean and fennel salad will make a great appetizer for heavy meals. The crunchy fennel and tender white beans go best with the white wine vinegar and blue cheese.

Ingredients

  • cup extra virgin olive oil
  • cup white wine vinegar
  • salt and pepper, to taste
  • 1 tsp dried thyme
  • 30 oz cannelloni beans, rinsed and drained
  • 2 cloves garlic, minced
  • 2 fennel bulbs, sliced
  • cup blue cheese, crumbled
  • parsley , for garnish

Instructions

  1. Combine all ingredients in a large bowl and chill for several hours before serving.
