How To Make Roast Carrot & Bean Salad with Feta

Ingredients
- 4 large carrots, peeled and cut into sticks
- 1 can (15 oz) of white beans, drained and rinsed
- 1/2 red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- Salt and pepper, to taste
- 4 ounces of feta cheese, crumbled
- Fresh parsley, for garnish
Instructions

Preheat the oven to 425°F (220°C).

Place the carrot sticks on a baking sheet and drizzle with olive oil. Season with salt and pepper, then toss to coat evenly. Roast in the oven for about 20-25 minutes, or until the carrots are tender and slightly caramelized.

In a large bowl, combine the roasted carrots, white beans, and sliced red onion.

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Drizzle the dressing over the salad and toss to coat.

Sprinkle the crumbled feta cheese over the salad and garnish with fresh parsley.
