Ingredients

  • 1 lb white fish fillets
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 8 small tortillas
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels
  • 1/2 red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan over medium-high heat.

  2. In a small bowl, mix together curry powder, cumin, paprika, salt, and black pepper.

  3. Brush fish fillets with olive oil and sprinkle spice mixture on both sides.

  4. Grill fish for about 4-5 minutes per side until cooked through. Remove from grill and let cool slightly.

  5. In a large bowl, combine black beans, corn, red bell pepper, cilantro, lime juice, honey, salt, and pepper. Mix well to combine.

  6. Flake grilled fish into bite-sized pieces.

  7. Warm tortillas on the grill for about 30 seconds on each side.

  8. Place a spoonful of the bean salad on each tortilla, top with flaked fish, and garnish with additional cilantro if desired.

  9. Serve immediately and enjoy!
