Ingredients

  • 1 pound fresh green beans
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender.

  2. Drain the green beans and plunge them into ice water to cool quickly. Drain again.

  3. In a large bowl, combine the green beans, red onion, feta cheese, cherry tomatoes, and parsley.

  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the green bean mixture and toss gently to combine.

  5. Serve immediately or refrigerate until ready to serve.
