How To Make Watermelon, Jicama and Cucumber Salad
The refreshing taste that’s perfect for summer is all in this cucumber salad recipe. It also has watermelon slices, jicama, and fresh mint.

For Dressing:
- 1lime juice
- 2tbspolive oil
- 2tspraw honey
- ⅛tspkosher salt
- freshly ground black pepper,to taste
For Salad:
- 2cupswatermelon,cubed
- 2cupsjicama,peeled and cubed
- 1largecucumber,peeled, seeded and cubed
- ¼cupred onion,thinly sliced
- 2ozfeta cheese,cubed or crumbled
- 1tbspfresh mint leaves,chopped

In a large bowl, whisk together lime juice, olive oil, honey, salt and pepper.
