Ingredients
- 250g watercress
- 500g Jersey Royals, boiled and halved
- 4 shallots, peeled and quartered
- 1 bunch of radishes, sliced
- 1 cup white vinegar
- 1 cup water
- 2 tbsp sugar
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
Instructions

Preheat the oven to 180°C (350°F).

In a saucepan, bring the white vinegar, water, sugar, and a pinch of salt to a boil. Add the sliced radishes and simmer for 5 minutes. Remove from heat and let it cool.

Meanwhile, toss the halved Jersey Royals with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden brown.

In another baking dish, toss the quartered shallots with olive oil, salt, and pepper. Roast them for 20 minutes until caramelized.

In a large salad bowl, combine the watercress, roasted Jersey Royals, roast shallots, and pickled radish.

Drizzle with balsamic vinegar, olive oil, salt, and pepper. Toss well to combine.
