- 4 medium potatoes, boiled and cubed
- 1 cup frozen peas
- 1 cup corn kernels
- 1 carrot, peeled and grated
- 1 small onion, finely chopped
- 1 cup cooked chicken, shredded
- 1 cup mayonnaise
- 2 tbsp dijon mustard
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

In a large bowl, combine the potatoes, peas, corn, carrot, onion, and chicken.

In a separate bowl, whisk together the mayonnaise, dijon mustard, salt, and black pepper.

Pour the dressing over the salad mixture and toss until well coated.
