  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1 jalapeno, seeded and minced
  • 2 tablespoons lime juice
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cabbage, carrots, red onion, cilantro, and jalapeno.

  2. In a small bowl, whisk together the lime juice, mayonnaise, apple cider vinegar, chili powder, cumin, salt, and pepper.

  3. Pour the dressing over the cabbage mixture and toss until well coated.

  4. Serve immediately or refrigerate for at least 30 minutes to allow the flavors to meld.
