Sicilian Strawberry Slaw Recipe

A salad is a perfect meal if you’re looking for something light and fulfilling at the same time. This authentic slaw recipe provides a great twist to the ordinary coleslaw! Instead of fine and julienne-cut vegetables, you get a bite out of sweet strawberries in this Scillian version.

Ingredients

  • 2 cup fresh strawberries, sliced
  • 15 oz white beans, small, rinsed and drained
  • 2 cup baby spinach
  • 10 oz angel hair coleslaw
  • ¼ cup basil, snipped
  • 2 tbsp red onion, chopped
  • 2 tbsp mayonnaise
  • 2 tbsp olive oil
  • 1 clove garlic, pressed
  • 2 tbsp red wine vinegar
  • 1 tbsp dried currants
  • ½ tsp lemon zest
  • 1 tsp honey
  • pine nuts, toasted

Instructions

  1. In a salad bowl, combine the first 6 ingredients.

  2. Whisk together the remaining ingredients in a small bowl until well blended.

  3. Toss with the slaw mixture to evenly coat. Garnish each serving with pine nuts.
