How To Make Crispy Crackled Pork Belly with Fennel & Apple Slaw

Ingredients
- 1.5 kg pork belly
- 2 tbsp salt
- 2 tsp black pepper
- 1 tsp fennel seeds
- 1 tbsp vegetable oil
- 2 bulbs of fennel, thinly sliced
- 2 green apples, julienned
- 2 tbsp lemon juice
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions

Preheat the oven to 220°C (425°F).

Score the skin of the pork belly and pat it dry with a paper towel.

Rub salt, pepper, and fennel seeds all over the pork belly, including the skin.

Place the pork belly on a wire rack in a roasting pan and roast it in the preheated oven for 30 minutes.

Reduce the oven temperature to 160°C (325°F) and continue roasting for 2 to 2 ½ hours, until the pork belly is crispy and tender.

While the pork belly is roasting, prepare the slaw by combining the sliced fennel, julienned apples, lemon juice, mayonnaise, and Dijon mustard in a bowl. Season with salt and pepper to taste.

Remove the pork belly from the oven and let it rest for 10 minutes before slicing.

Serve the crispy crackled pork belly with the fennel and apple slaw on the side.
