How To Make Seared Steak with Rocket & Wheat Salad

Serves:
Ingredients
- 4 steaks (ribeye or sirloin)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups rocket leaves
- 1 cup cooked wheat
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup balsamic vinegar
- 2 tablespoons extra-virgin olive oil
Instructions

Season the steaks with salt and pepper on both sides.

Heat olive oil in a large skillet over high heat.

Add the steaks and sear for 3-4 minutes on each side, or until desired doneness.

Remove the steaks from the skillet and let them rest for a few minutes.

In a large bowl, combine the rocket leaves, cooked wheat, cherry tomatoes, red onion, and feta cheese.

In a small bowl, whisk together balsamic vinegar and extra-virgin olive oil to make the dressing.

Pour the dressing over the salad and toss to combine.

Slice the rested steaks and serve on top of the salad.
