How To Make Seared Steak with Rocket & Wheat Salad

Serves:

Ingredients

  • 4 steaks (ribeye or sirloin)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups rocket leaves
  • 1 cup cooked wheat
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup balsamic vinegar
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Season the steaks with salt and pepper on both sides.

  2. Heat olive oil in a large skillet over high heat.

  3. Add the steaks and sear for 3-4 minutes on each side, or until desired doneness.

  4. Remove the steaks from the skillet and let them rest for a few minutes.

  5. In a large bowl, combine the rocket leaves, cooked wheat, cherry tomatoes, red onion, and feta cheese.

  6. In a small bowl, whisk together balsamic vinegar and extra-virgin olive oil to make the dressing.

  7. Pour the dressing over the salad and toss to combine.

  8. Slice the rested steaks and serve on top of the salad.

  9. Enjoy!
