Ingredients

  • 2 lb potatoes, peeled and roughly chopped
  • 3 tbsp unsalted butter
  • 2 cups kale , or green cabbage, chopped
  • cup milk
  • 1 cup bacon bits
  • 2 green onions , chopped, or ¼ cup spring onions, finely minced
  • Salt and ground white pepper , to taste

To serve:

  • 1 tbsp unsalted butter, cubed and chilled

Instructions

  1. In a medium pot, add the potatoes and fill them to cover with water.
  2. Add salt and bring the water to a boil and then reduce heat to simmer for 40 minutes, or until potatoes are tender.
  3. Drain the water and mash the potatoes while warm. Set aside.
  4. In a medium skillet, melt 3 tablespoons of butter and add the kale and onions.
  5. Saute for 5 minutes, stirring often, or until wilted.
  6. Add in milk and bring this to a simmer.
  7. Pour the hot milk and kale mixture, and bacon bits, into the mashed potatoes. Mix to combine.
  8. Season with salt and pepper to taste. Adjust as necessary.
  9. Serve warm with a tablespoon of butter on top. Best to consume while the butter is slowly melting.
