How To Make New Potato, Tuna & Spinach Salad

Ingredients
- 1 lb new potatoes, halved
- 1 can tuna, drained
- 4 cups fresh spinach
- 1/4 cup red onion, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup black olives, sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions

Boil the new potatoes in a pot of salted water until tender. Drain and set aside to cool.

In a large bowl, combine the cooked potatoes, tuna, spinach, red onion, cherry tomatoes, and black olives.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss to coat.

Serve the salad chilled or at room temperature.
