Ingredients

  • 1 lb new potatoes, halved
  • 1 can tuna, drained
  • 4 cups fresh spinach
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the new potatoes in a pot of salted water until tender. Drain and set aside to cool.

  2. In a large bowl, combine the cooked potatoes, tuna, spinach, red onion, cherry tomatoes, and black olives.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss to coat.

  4. Serve the salad chilled or at room temperature.
