How To Make New Potato & Tuna Salad

Ingredients

  • 1 lb new potatoes, halved or quartered
  • 2 cans of tuna, drained
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the new potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool slightly.

  2. In a large bowl, combine the cooked potatoes, tuna, red onion, cherry tomatoes, black olives, and parsley.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the potato mixture and toss gently to coat.

  4. Serve the salad chilled or at room temperature.
