How To Make Warm New Potato & Smoked Mackerel Salad

Serves:

Ingredients

  • 500g new potatoes, halved
  • 200g smoked mackerel fillets, flaked
  • 1 red onion, thinly sliced
  • 100g cherry tomatoes, halved
  • 50g baby spinach leaves
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Place the new potatoes in a pot of boiling water and cook for 10-12 minutes, or until tender. Drain and set aside.

  2. In a large bowl, combine the smoked mackerel, red onion, cherry tomatoes, and baby spinach.

  3. Add the warm new potatoes to the bowl and toss gently to combine.

  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  5. Drizzle the dressing over the salad and toss to coat evenly.

  6. Serve warm and enjoy!
