Ingredients

  • 1 lb baby potatoes, halved
  • 1 can tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 2 cups mixed salad greens
  • 1/4 cup pesto sauce
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot of salted boiling water, cook the potatoes until tender, about 10 minutes. Drain and set aside.

  2. In a large bowl, combine the cooked potatoes, tuna, cherry tomatoes, red onion, black olives, and mixed salad greens.

  3. In a small bowl, whisk together the pesto sauce, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Serve the warm potato and tuna salad immediately as a main course or side dish.
