How To Make Beany Beef Chilli Stew with Crunchy Tortilla Croutons

Ingredients
- 1 lb beef stew meat, cut into chunks
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
- 4 small corn tortillas, cut into squares
- 2 tbsp vegetable oil
Instructions

In a large pot, heat olive oil over medium heat. Add beef stew meat and brown on all sides. Remove from pot and set aside.

In the same pot, add diced onions, minced garlic, and diced bell pepper. Sauté until onions are translucent.

Add the beef stew meat back to the pot along with diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, paprika, salt, and pepper. Stir to combine.

Bring the mixture to a boil, then reduce heat to low and simmer for 1 hour, or until the beef is tender.

In the meantime, preheat the oven to 375°F (190°C). Place the tortilla squares on a baking sheet and toss with vegetable oil.

Bake the tortilla squares for 10-12 minutes, or until they are crispy and golden brown. Remove from the oven and set aside.

Once the stew is ready, serve it hot in bowls and top with the crunchy tortilla croutons.
