Ingredients
- 8 cups mixed salad greens
- 8 slices pancetta
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onion
- 1/2 cup sliced kalamata olives
- 1/4 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C). Place the pancetta slices on a baking sheet and bake until crispy, about 10 minutes. Remove from the oven and let cool.

In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, kalamata olives, and Parmesan cheese.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

Crumble the cooled pancetta over the salad and drizzle the dressing on top. Toss gently to combine.
