Ingredients

  • 4 Walleye fillets
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1/2 cup chopped parsley
  • 1/4 cup diced red onion
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.

  2. Rinse quinoa and place in a pot with vegetable broth. Bring to boil, then lower heat and cover.

  3. Cook quinoa for 15-20 minutes until tender and fluffy.

  4. Rub Walleye fillets with olive oil and season with salt and pepper.

  5. Grill fish for 3-4 minutes per side or until cooked through.

  6. In a separate bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.

  7. In a large bowl, combine cooked quinoa, grilled Walleye, diced peppers, red onion, and chopped parsley.

  8. Drizzle the dressing over the salad and toss gently to combine.

  9. Serve immediately and enjoy!
