How To Make Walleye and Quinoa Salad
A delicious and nutritious salad featuring grilled Walleye fish and protein-rich quinoa.
Serves:
Ingredients
- 4 Walleye fillets
- 1 cup quinoa
- 2 cups vegetable broth
- 1 red bell pepper, diced
- 1/2 cup chopped parsley
- 1/4 cup diced red onion
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions

Preheat grill to medium-high heat.

Rinse quinoa and place in a pot with vegetable broth. Bring to boil, then lower heat and cover.

Cook quinoa for 15-20 minutes until tender and fluffy.

Rub Walleye fillets with olive oil and season with salt and pepper.

Grill fish for 3-4 minutes per side or until cooked through.

In a separate bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.

In a large bowl, combine cooked quinoa, grilled Walleye, diced peppers, red onion, and chopped parsley.
