How To Make Winter Quinoa Salad Recipe
A hearty and nutritious salad that packs a punch with seasonal winter ingredients.
Serves:
Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 small sweet potato, cubed
- 1/2 cup pomegranate seeds
- 1/4 cup chopped walnuts
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions

Rinse quinoa and place in a saucepan with vegetable broth. Bring to a boil, reduce to a simmer and cook for 12-15 minutes or until all liquid is absorbed.

Meanwhile, preheat oven to 400°F. Toss cubed sweet potato with olive oil, salt and pepper, and roast for 15-20 minutes or until tender.

In a large mixing bowl, combine cooked quinoa, roasted sweet potato, pomegranate seeds, chopped walnuts and crumbled feta cheese.

In a small measuring cup, whisk together olive oil, balsamic vinegar, salt and pepper to make the dressing.

Pour the dressing over the quinoa salad and toss until everything is well coated.

Serve immediately or chill in the fridge until ready to eat.
